Buffalo Chicken Risotto Recipe

This is a really easy way to spice up plain risotto. Throw in some diced, grilled chicken and plenty of buffalo wing sauce and you’ve got a delicious meal!Ingredients- 1 cup arborio rice (risotto rice)
- 3 cups chicken stock
- 1-2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- salt and pepper
- 3 boneless skinless chicken breasts, grilled then diced
- buffalo hot wing sauce – this will be to your liking

The picture doesn't look like risotto at all.
But this is something I'll definitely have to try. :)
This needs crumpled blue cheese on top.

@Mandi - I am a sucker for all things buffalo, but I must have blue cheese dipping sauce. This does look good though.
@supanamja@xanga - Thanks! I had made buffalo chicken pizza and while putting things away saw the arborio rice in the pantry and inspiration struck. It's hearty and spicy, and leftovers are great!
It looks good, but like someone else said, not like risotto, lol. It looks like rice with chicken.
I also do not see risotto stereotype. Must be new.
