Guest post by MommyWizdom I love going to Fall and Winter fairs. At one particular fair I once attended there was a mom and daughter team selling I can't remember what. As their way of enticing you to their table though, they also had pumpkin chocolate chip cookies. There were three to a bag and they just handed them over for fifty cents a pack. As my weakness for anything pumpkin took over, I walked over to the table and got some cookies. Ever since then, I've been hooked. What's better than my two favorite things together in one delicious cookie?!
Of course, I didn't think to get the recipe from her. Instead I had to do some research and finally found a recipe that came close to those cookies. I am about to share it with you here.
Everywhere I take these cookies, I
always get asked for the recipe,
always. So, get ready to be famous.
The Best Pumpkin Chocolate Chip Cookies Ever!Preheat oven to 350 degrees F
1 c. granulated sugar
1 c. pumpkin
1/2 c. oil (corn or canola -
not olive)
Beat these three together.
Add one egg
2 c. flour
2 tsp. baking powder
1. tsp. cinnamon
1/2 tsp. salt
sift these four together
1 tsp. baking soda, dissolved in 1 tsp. milk
1 tsp. vanilla extract
1 c. chocolate chip cookies
Beat sugar, pumpkin, and oil with electric mixer. Add egg, beat.
Add sifted ingredients to pumpkin mixture.
Stir with baking soda/milk mixture. Add vanilla extract and chocolate chips. Stir (not mix).
Drop by tsp. onto ungreased cookie sheet. Bake 350 degrees F for 8-10 minutes.
Yields 3 1/2 dozen.
If like these cookies to be really moist. To accomplish this, after cooling, store cookies in plastic containers overnight. This makes them soft; yummy. If you like a harder cookie, you can store them in a cookie jar or box after cooling.
Enjoy! Let me know how you liked them!
