Fun And Easy Recipe: Lemon Curd with Meringue

We were recently given some lovely fresh lemons as a gift. I wanted to make something special with them so here is what I did, it was so yummy!
Perfect Lemon Curd (recipes from AllRecipe.com)
Ingredients
- 3/4 cup fresh lemon juice
- 1 tablespoon grated lemon zest
- 3/4 cup sugar
- 3 eggs
- 1/2 cup unsalted butter, cubed
Directions
- In a 2 quart saucepan, combine lemon juice, lemon zest, sugar, eggs, and butter. Cook over medium-low heat until thick enough to hold marks from whisk, and first bubble appears on surface, about 6 minutes.
Then I added some meringue!Ingredients
- 4 egg whites
- 6 tablespoons white sugar
Directions
- To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
- Bake in preheated 350 degree oven for 10 minutes, or until meringue is golden brown.
I put these together in individual little pinch bowls from Pampered Chef. It was lovely, tasty and fun!!!

I had been using a lot of lemons a few months ago and bought a ton of them at a bulk store. Now they are just sitting in my fridge so I am excited to now have this recipe, I think I will make these for Thanksgiving. Thanks for sharing!
