Wanted: Christmas Cookie Recipes!

Amidst the talk of labor, birth, epidurals, and vaccinations I don't think it has come up that I love to cook and bake. I usually happily hand the apron over to my boyfriend because he is a master chef--not by profession, but cooking is by far his favorite hobby and I am lucky enough to get treated to amazing dinners most days of the week. (As I type he is hard at work at what I'm sure will be another fantastic meal!). Every once and I while I am able to reclaim the stove, and tis' the season, so I am eager to get to work on some Holiday baking.
While I have a battery of my mom's Christmas cookie recipes, I am going home to spend the holidays with my family in the Midwest and I wanted to bring a collection of new cookies with me. While I planned on browsing on-line for some recipes, I figured I would just go straight to the experts. I hope you will all share your favorites with me. I'm sure there are others who could use some new recipes too!

Coconut Macaroons and Butter Spritz! Yummmmmmy!
I love adding dried cranberries to any chocolate chip recipe. Also, I substitute the regular milk chocolate chips with dark chocolate chips for a richer, taste. The cranberries balance out the dark chocolate.
I love the regular ones - chocolate chip, oatmeal raisin, peanut butter. But I just love cookies, so I thought I would share something (a little) different.
Snickerdoodles
Mix together 1 cup shortening, 1 1/2 cups sugar and 2 eggs
Sift together 2 3/4 cup flour, 2 tsp cream of tartar, 1 tsp baking soda
Stir dry ingredients into sugar mixture
Chill dough. Roll into balls the size of small walnuts. Roll each ball in a mixture of 2 T sugar and 2 tsp cinnamon. Place 2 inches apart on ungreased cookie sheet. Bake until lightly browned but still soft (400 for approximately 8-10 minutes)

This isn't a recipe exactly, but every Christmas we would make our own white chocolate covered oreos. Just buy some oreos, melt some white chocolate, and dip away. Allow them to cool to harden. They are delicious! (And so much better than the store-bought ones.) I think we did regular chocolate covered ones a few times too, but I think the white chocolate is better.
I am also looking for recipes - real Christmassy ones! The one cookie that always reminds me of Christmas in America is a Moravian ginger cookie (there is a big enclave of Moravian people in Old Salem, North-Carolina, where I used to live). I don't have a recipe for it though! I'm sure I could google it, but I'd like a tried-and-tested recipe if possible
Something similar to what @cbprice24@xanga said - we like to make Chocolate Peanut Butter Ritz sandwiches. Just spread peanut butter between two Ritz crackers and dip in melted baking chocolate..

my mom and I make oreo balls which are similar to what cbprice24 suggested. what we do is buy a sleeve of oreos ( I like double stuffed) and crush them then mix the crushed oreos with cream cheese roll the mixture into little bowls and dip them in dipping chocolate let cool and harden then YUM! :)
