    Holidays Are All About the Food! -A Recipe for the Momaroo Family

    For me, the holidays have always been about the food.  Presents, family, all of that is nice.  I love seeing everyone, and exchanging gifts.  But what I remember most is the food. 

    I've always been a bit of a foodie, even when I was a kid.  I remember one night staying up with my mom's food coloring, flavored extracts of fruits, ect., and a gallon of milk.  First I would flavor the milk, then add in food coloring until it matched the flavor.  Yellow banana milk, red rasberrry, green mint, and so on.   I figured out which ones tasted best, then had everyone try them the next morning.  Evidently, they weren't that good.  But I tried.  I also experimented once with low-sugar, low-flour cookies.  They bounced.  They were gross. But I ate several of them just for the sake of my young pride. 

    So when it comes to the holidays, I am in my element.  Of course, my food turns out a lot better now than it ever did when I was a kid.  And people actually look forward to whatever it is I am making.  I love to bake.  For the past several years, Christmas has meant making cookie and candy platters for family members and friends to take home as a gift.  I am the "designated" baker for all of the family get-togethers. 

    I would love to bring my hobby to you, my momaroo family.  Between now and the end of the holiday season, I will be posting my favorite holiday recipes, along with a story or two associated with it.  I will also gladly answer any cooking or food questions you might have, or look for a special recipe at your request.  If I get a lot of response to this, I can't promise to answer every question, but I'll do my best.

    To kick this off, I want to share the recipe for the cookies I made last night.  They were the official start of my holiday baking season, and my daughter's first chance to lick the spoon afterwards.  And, OMG, they are amazing.  Especially if served warm with eggnog or milk. 

    Chocolate Peppermint Yummies

    1 cup butter, room temperature
    1 c. light brown sugar, packed
    1/2 c. white sugar
    1 lg. egg
    2 tsp. vanilla extract
    2 c. flour
    1/2 c. cocoa powder
    1 tsp. baking powder
    1/4 tsp. salt
    1 package Andes peppermint chips

    Preheat the oven to 350. 
    In a large bowl, cream the butter and sugars together, then add the egg and vanilla.  Cream again.
    In a medium bowl, mix the flour, cocoa, baking powder, and salt.  Whisk together until combined.
    Mix the wet and dry batter together until thoroughly combined.  Stir in peppermint chips.

    Scoop cookies (about 1 tbsp. of dough) onto ungreased cookie sheets.  Bake for 10 minutes, or until the top is poofy, and the bottom is firm.  Let them sit on the cookie sheet for a few minutes, then transfer them over to a cooling tray. Serve with milk, and Enjoy!!!
