  • Recipe: Soy Sauce Chicken Wings

    This is one of M's favorite foods. There are no other meat or chicken dishes that she will pick up and eat by herself. She will eat other meat or chicken dishes, but we have to feed it to her. When I first started making it, I had lost the recipe, so I tried something similiar. She knew it was different. I found it again, and have been stocking up on chicken wings whenever I can. I'm not sure the exact measurements because I use my trusty little Gladware cup for this recipe. I can make these chicken wings in my sleep.

    10-12 chicken wings
    2-3 green onions, chopped
    2 garlic cloves, chopped
    2 teaspoons vegetable oil
    < 1/2 cup soy sauce (enough to cover 3/4 of the wings in the freezer bag, try to find light soy sauce)
    < 1/6 cup sugar (about 3 "regular" spoonfuls)

    (Sidenote: I chop up the wings (discarding the tips) when I purchase the bulk packages of chicken wings and bag them in freezer bags. I found this to be the best way to do it because then I can squish the chicken in the marinade, and I don't have to stir it up to get the marinade all over. I used to have it in a bowl or a dish, but not all of the chicken wings would be in the marinade, so I would have to stir it up half way through the marinating process so that it gets into everything.)

    Mix everything together. Marinate in refrigerator for 30 minutes (or more if you like the marinade to soak in). Put into the baking pan/dish. Pour half of the marinade over the chicken wings. Bake at 350 degrees for 20 minutes. Flip chicken wings, and pour rest of the marinade onto the chicken wings. Bake another 350 degrees for 20 more minutes. Enjoy!

    I like this recipe more than some I've tried because I don't have to watch the chicken wings on the stovetop, just set the oven. We have the George Foreman 8-in-1 Toaster Oven/Broiler Rotisserie (a wedding gift), so we can actually make a lot in there. The Costco pack, which is 6 packs of 1 lb of chicken wings = 6 lbs, has 12 wings (when chopped up) for 1 lb, so that's how many we usually make.
