  • Recipe: Enchilada Rice

    enchilada This is my absolute favorite. I make HUGE batches of it because it's quick and easy, it reheats well and I really really love it. (This was slightly adapted from a Hamburger Helper meal. So much healthier and makes a more.)

    I'll give you the basic 'normal sized' recipe. You adjust to make the amount you want.

    Ingredients:
    • 1 cup rice (I use brown, it's healthier), cooked.
    • 1/2 lb of whatever meat you want. Ground turkey/beef, grilled and cubed chicken/turkey. I make mine most often with ground turkey but it's also good with grilled chicken.
    • 1/2 cup chopped onion and bell pepper. I throw them in to the skillet when my meat is almost done to cook them a bit.
    • 1/2 cup corn or any veggies you like.
    • 1 packet enchilada powder mix.
    • Shredded pepper jack cheese.

    Directions:

    Mix rice, meat and veggies. Add 1/2 packet of powder mix. (With this amount of food you only need 1/2. If you make more, use more.) Mix well. Add cheese, mix until melted. Serve and enjoy.

    This is my best 'stand by' meal. I usually have everything I need on hand and can throw it together quickly. The only odd thing is the powder mix but I buy 5 packets at a time so I have them.

    Recently, I made this with 3 cups of rice, a pound of ground turkey, half an onion (I didn't have a pepper) and a cup of mixed stir fry type veggies. I also made corn bread. I have a big bowl of leftovers in my fridge. Yum.
